Taste of the Town: B’s Fish Taco and Woo’s Crispy Bacon

Full disclosure: I love fish tacos and I love crispy bacon, so these two meals start, as some might say, on third base.

After all, what’s not to like? One of the strengths of the Prescott Market, even at this early stage, is its food for many palettes and pickinesses. Want something light before the game? Need something heavy to soak up a beverage or two? These two speak to the range of options. (Oh, and with a gentle nod to people my age and older, make sure to give your phone number when you order so that your establishment can text you when it’s ready. Grabbing a drink at the Almanac taproom or playing a lawn game on the patio is perfect for waiting, or if you’re lucky on the weekends, check out one of the many street markets outside on 18th.)

Prescott Meats B’s Fish Taco: Obviously, I’m going to try everything B’s related. This is your classic fish taco with minimal additions: there’s light cabbage and tomato and some cilantro on top, and the spicy aioli—at least to my measure—was mild. This allows the fish itself to really shine, and shine-on-that-crazy-diamond it did. Mine was locally-sourced red snapper, and the fish does change depending on what’s available. I really hate when people say this, but in this case, I have to, in live-long-enough-to-see-yourself-become-the-villain acceptance: it tasted like it just came out of the ocean (in that very good way, not like, the briny and scaly and flopping around on the bottom of a boat way). These run about $9 each and they aren’t especially large, so I recommend two for a meal.

Woo Can Cook: Crispy Fried Bacon: The first time I had this was at a Roots game, and I thought about it for days afterward. I love the piquants—garlic, onions, ginger, hoisin—and there’s just enough veggies to make me think I’m eating really very quite super healthy. But the combination of softer, well-cooked chicken and the crispy bacon does it for me. It’s hearty and perfect for sustaining or maintaining at the ballpark for hours. Crucially, it’s a great re-heat if you can manage to hold off a full devour, and the portion is well-suited to saving. Graciously, in true Woo Can Cook and Ratatouille fashion, they make the full recipe available (along with music to cook to, videos, and merch), but take my word for it: though anyone can cook it, let them make it for you.

No word yet on Kamala’s favorites from her recent visit, but surely the VP will be getting in touch with this site promptly as a matter of national urgency.
